Utensils You Will Probably Want To Purchase For Mexican Cooking

By Beverley Drake

There are certain tools and equipment that you will need for cooking authentic Mexican foods. Some of those tools may only be found in Mexico, where as others may be found in a good Mexican grocery store in your own neighborhood. They will help you to prepare authentic Mexican food. You will find that Mexican cooking is very rewarding.

Mole is best made in a Cazuelas. This is a small bowl like pottery dish with handles that is used to simmer sauces. Clay is very good at dispersing heat and prevents hot spots where sauce is burnt. The handles make them easier to handle in open fires. The outside may be painted brightly and beautifully, while the inside is glazed. These clay pots look great when just setting on a shelf as decorations.

Olla or Barro are Mexicaan pots. These large clay pots are used to simmer beans, soups or stews. They offer very even heating and can be used all day long over direct flames. Clay pots are fragile and quick changes in temperature should be avoided to keep from breaking the pot.

The griddle or Comal can be made of cast iron, aluminum or even clay. The griddle is round and can be used to warm tortillas or for roasting vegetables including chiles. There are several sizes of Comals available, some up to two feet in diameter.

The Metate y Mano is a hand grinder that has been carved from lava rock or stone. We would call it a mortar and pestle. In Mexico, it is used for grinding corn or spices and foods may be mixed using the cylinder of stone. There are usually three legs that have been carved to hold the bowl upright.

Mexico's true mortar and pestle is called the Molcajete y Tejolote. It can be made out of clay, wood or stone. A cylinder of the same material that has been rounded on each end is used to crush the spaces or chilis to prepare them for cooking.

A Molinillo is a wood wisk which is used to froth hot chocolate in a cup. To use this tool, you spin it between your hands to form the foam on the chocolate.

The Tortilla Press or Tortillero was first made of wood, but today can be found made of cast iron or resin. There are aluminum tortilla presses, however they tend to break easily, so save your money. The press has two large wood blocks or round plates. Mesa is rolled into a ball and pressed in the press in order to make a tortilla.

As you can imagine, cooking in the traditional Mexican way can take some time. Fortunately, there are many shortcuts that you can take, and many people make very tasting Mexican food using utensils that are already in their kitchen.

In addition, you may be able to find a high quality Mexican bakery in your neighborhood that can supply you with high quality tortillas so you will not have to grind your own corn or press your own tortillas in order to make your own authentic Mexican food. - 32190

Baking For the Busy Woman

By Marion Wilkinson

Do your children look forward to having that dessert after dinner? How about your husband and yourself for that matter? Making those homemade goodies takes time, something you may be short on in your daily life.

Don't you just love the smell of pies or cakes baking in the oven. The scent fills the air and the house with that aroma only fresh baked goods can achieve. Wouldn't you love to have homemade treats already made when unexpected guests arrive? With a little pre-planning you can.

Holiday time is such a busy time in our lives. Between the shopping and decorating, there isn't much time left to do baking. Starting now with one or two treats a week, gets your freezer full and your family excited.

If you love to bake, plan on making that very special dessert when you need it. Pre-baking is best when you use easy recipes that freeze well. Pies are great for this. Layer cakes are also very easy since you can bake them and freeze them before frosting. They stay moist and will hold up for a month or more. Be sure to wrap your treats tightly in foil and if you want, store them in a zipper bag for added protection.

Muffins and breads are another great thing to bake prior to the holiday season. Although, these can be baked year round for those mornings when you are rushed and have to eat something. You can make healthy muffins loaded with fiber that your family will love and they are so easy to serve your house guests. Doing breads, like banana, apple cinnamon, walnut, etc. are nice to have in the freezer for a quick finish to a luncheon.

Be sure to start watching the supermarket ads for sales on your baking supplies. Spreading the cost out over a few weeks really helps with your grocery budget. Look for coupons in magazines and online to help defray the costs. A lot of stores will offer specials around this time of the year, just keep an eye out for them.

Preparing ahead of time helps with your stress level during the busy time around the holidays. But remember, doing baking like this all year long will simplify your life and make your family extremely happy campers. Happy Baking!!! - 32190

Some Different Dessert Ideas

By Debbie Rivers

Desserts are one of those lovable guilty pleasures. The sweetness of a nice dessert after a good meal is about as good as anything you could want to eat, especially if it's prepared right.

With so many different dessert varieties, it's sometimes hard to think about an original creation that will taste great. It's always easiest when we're ordering them off a menu! Thankfully, they're a lot easier to make than it seems.

If you haven't had these before, look into these as they make for some great dessert ideas. You should definitely be able to find some recipes for these things online, not to mention the many different ways you can make them.

The first dessert that I'll recommend is a mousse, but a white chocolate one at that. I'm sure you've had the traditional rich chocolate mousse with dark chocolate shavings, but going white is a great way to mix it up.

If you prefer to add something to your mousse, there are a number of different things you can throw into the mix. I'm sure your imagination is already at work with respect the the numerous possibilities there.

My next suggestion is something a bit colder, as many people prefer to stick with ice cream. If you believe this to be the case when it comes to your own preferences, go for the ice cream martini dessert. All you need is some martini glasses and a few toppings to pair the ice cream with

Have some fun with it and throw in some trimmings so that you have a sundae in a martini glass. Your guests will love the added touch that the martini glass brings, not to mention the taste of the dessert.

The third dessert suggestion is another creative play on something more traditional. It's easier to make a mango into the shape of a rose, and there's no doubt in my mind that you should be able to do this.

From there, you'll put some ice cream inside the mango, which makes for a beautiful presentation and a tasty dessert. - 32190
