The donut business can be very profitable, you already know that. The overhead is very low compared to other food products in the restaurant industry. The barriers to entry in the donut business can also be low, depending on whether you purchase a franchise or not. We chose not to purchase a franchise but to purchase the entry level donut maker.

We have talked about this before but flea markets are in excellent place to start selling your doughnuts. Flea markets get a lot of traffic and people are naturally inclined to buy things. You can be assured that if you get into a good flea market, you can sell a lot of doughnuts. This is one of the main reasons we have not continued with this project because it has been difficult getting into a flea market setting.

So now that that is out of the way, should we sell anything else but doughnuts? We have thought about this, and each one of us have varying opinions. We all do agree however, that the menu should be very limited. We will not sell 100 varities of doughnuts, we all agree on that. It is just not in our business model, the more choices you give the consumer, the more overhead that you have. We have studied other businesses that offer small doughnuts, and they have a very limited menus themselves. We will probably model Our donut business After what they are doing. We have noticed that the doughnut shops that are in business today have been around for quite some time now. None of them have changed much, and have not added things to their menu. They offer one or two varieties of small doughnuts, and perhaps a couple varieties of drinks to go along with the doughnuts.

We have actually thought about offering drinks such as milk coffee or Juice but we just don't know what to do yet. We are leaning towards offering just the doughnuts and no drinks. We'll probably have to kind of doughnuts; sugared and cinnimon. If we decide to add drinks to the menu, it will be a market test to see how it goes. But as we've mentioned before the more items you have on your menu the more overhead that you will have. If the donuts sell very well then maybe drinks will be a nice addition to our menu.

This same cook may also have ingredients in the cupboard that he or she bought for one special meal on an occasion, and it has been sitting in that cupboard ever since. This might be liquid smoke, or fenugreek.

Perhaps the greatest experiments with recipes are those from other countries. You can try something Greek, like moussaka, or Italian, like lasagna, or East Indian, like lamb korma, or Mexican, like carne asada tacos.

You will find that the main difference between the different ones of various countries is the spices they use. In Greece, they use a lot of cinnamon on their meat to sweeten it up. Italians like their tomato sauced spiced up with oregano, basil, and thyme, among other spices. In India, the use of turmeric, cumin and coriander go far. You will discover that the joy of collecting healthy recipes will easily take over your book shelves. Then there are the recipe magazines that will overwhelm you. And do not forget about the recipes you cut out from the newspaper, because you know you are going to try them some day.

You can stumble on collections in thrift shops. These are from clubs that people were members of and received them monthly and put them in binders. Or you will run across other types of collections that resemble a set of encyclopedias. There are annual collection recipe books for the year. And you would not want to pas up some of those really old cook books. They usually have a couple of really great classic formulas that you thought you would never find. Then there is the kind of collection that can drive a cook crazy, when they put them all in the index box.
